15 min Poached Eggs with spinach

Perfect start to the EASTER WEEKEND ❤

Ingredients :

A egg ( I use eggs which are enriched with omega 3 )

1 ripe and ready avocado

Handful of spinach

1/2 slice of bread ( I use sourdough )

A pinch of salt , pepper and chilli flakes

Method :

1.Put the bread to toast and boil 3 cups of water in a kettle

2.Heat a milk pan and add boiled water to it. Simultaneously, break the egg into a small glass ( Remember, its easier to make a good poach if you dont break the egg directly into the pan )

3. Swirl the water with a fork in a circular way and then add in the broken egg from your glass to the pan on a high heat. Leave it for 4-5mins and then remove it. If you dont want your yolk runny, leave it for another 3 mins and let it cool.

4.On the side , add the spinach to a high heat pan, let it cook (will leave some water ) and remove it after 3 mins.

5.Time to assemble. Add the sourdough bread to a plate, put the spinach over the toast, finish with the poached egg and finally add a pinch of salt and pepper. Add your avocado on the side and sprinkle some crushed chills on it and enjoy :-).
