Oat & banana pancakes

Difficulty : Easy ( Equipment needed : A food blender )

Ingredients:

2 eggs ( free range organic eggs if possible as they are healthier )

2 tbsp of rolled oats

1 fully ripe banana  ( ripe is essentially when it starts to have black spots )

Handful strawberries

1 tsp of coconut nectar ( alternative to sugar )

1/2 tsp of organic cinnamon

1/2 tsp of organic coconut oil ( another oil can be used as well )

Method:

1.Beat the eggs and keep aside.

2. Mash the banana with a fork and keep aside.

3.Add the oats, mashed banana, eggs and cinnamon to the blender and blend for 1 min

4.Heat a pan and add the oil to it

5. Take a big spoonful of your pancake batter and spread it on the pan ( you can add 2 -3 at a time if your pan is big )

6. Add the lid , flip the pancakes and leave for 1 min ( until slightly brown )

7. Stack your cooked pancakes to a plate, add chopped strawberries and drizzle coconut nectar and serve immediately.
