Steamed aubergine curry

This is our go to weekday meal for those cold wintery evenings when we need to whip up a healthy curry…<3..A family favourite back home in India and my grandmom’s recipe.

Difficulty : Easy ( Equipment : Pressure cooker )

Ingredients :

Aubergine : 3 large sized , washed and chopped into cubes

Onions : 2 large sized onions

Cumin seeds : 1 tbsp.

Turmeric / Coriander powder : 1 tsp each

Water : 2 cups

Ghee : 1 tbsp.. of organic ghee ( you can also use olive / rice brand oil )

Salt : as per taste

Method :

1.Heat the oil in a pressure cooker . Add cumin seeds and cook them untill they start to crackle (make sure not to burn them ). Then add onions to the cooker.

2.Once the onions turn slightly brown, add the cubed aubergine , turmeric, coriander power, salt and water. Give it a good stir for 2 mins.

3.Then add the pressure cooker lid and let it steam in high heat. Wait for 3 whistles and then take it off the heat. Let it rest for another 10 mins and then you are ready to serve :-).

4.You might want to mash up the aubergine if you prefer smaller pieces before serving. This goes well with basmati rice and a sprinkle of coriander leaves. Enjoy :-)…
