Avocado on Rye bread with roasted tomatoes

When I think of avocado toast, I always like to have a side with this as I believe that the more colors you add to your plate, the higher the chance of you getting your 5 a day veggies but also stick to a balanced diet. Also, while wholemeal bread is great, I switched over to rye bread as it keep me fuller for longer hours,  due to slow releasing carbs in them. This recipe has been our favorite for a while as we often have only 20 mins to prep breakfast, so, its our go to :-). Hope you like it too…

Difficulty : Easy ( Equipment : Roasting tin ) 

Ingredients : 

2 ripe & ready avocado ( organic is better ) 

6 cherry vine tomatoes 

I tsp of coconut or olive oil 

A pinch of red chilli flakes, pepper ,salt and lemon zest 

A slice of rye bread 

Method : 

1.Pre heat your oven to 200°F  , add 1 tsp of olive oil to the cherry tomatoes ( mix it well ) and keep aside to wait for the oven to heat up. Once it does, add this to a roasting container and put it in the oven for 10 mins. 

2.In the meantime, start to slice the avocado and  add it on top of a  toasted rye bread

3. Sprinkle some chilli flakes for the kick, pepper, salt over the avocado 

4.For that extra flavor, sprinkle some lemon zest on the top as well ( this is optional ) 

5.Once your tomatoes are roasted, serve them on the side with the toast. Enjoy :-).
